Hummus dip is the best partner for raw veggie, normally I ate hummus with bell pepper sticks, easy and healthy appetizer. Enjoy this adzuki bean hummus with your favorite vegetables or tortilla chips.

This recipe inspired by Kara Lydon with Spicy Adzuki Bean Hummus

Adzuki Bean Hummus

Ingredients:

  • 1 cup cooked adzuki beans
  • 2 tablespoons tahini
  • 1 garlic clove
  • juice of 1 lemon (2 tablespoons lemon juice)
  • 1 tablespoon parsley
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon paprika powder or chili powder
  • 1 tablespoon olive oil
  • some water
  • pinch of salt and pepper
  • Garnish: sesame seeds and chopped parsley (optional)

Instructions:

  1. Blend all ingredients into a food processor until smooth.
  2. Add some water and blend again (the thickness is depend on your desired consistency).
  3. Garnish with sesame seeds and chopped parsley.
  4. Served with bell pepper sticks.
