Zucchini Fritters

zucchini frittersHonestly, I’m not a fan of zucchini, but somehow they should be in our menu, this time I made zucchini fritters as appetizer,  suprisingly it’s turn delicious. The main ingredients that you need; grated zucchini, eggs and thyme for flavor. Try it!

This Zucchini Fritters recipe adapted from LauraInTheKithen.com

Zucchini Fritters


  • 1 zucchini, shredded (about 1 1/2 cup) and squeezed of any liquid
  • 2 eggs, beaten
  • 3-4 Tablespoons of flour
  • ¼ teaspoon of baking powder
  • 1-2 Tablespoon milk
  • 1 Tablespoon of fresh chopped thyme
  • Salt and pepper to taste
  • 2 Tablespoons of olive oil


  1. In a large bowl, mix all the ingredients besides the olive oil.
  2. In a large pan, heat the oil over medium heat until hot.
  3. Ladle about 2 tablespoons of the batter for each fritter, fry for about 3-4 minutes on each side or until golden brown.
  4. Lay them on a paper towel lined plate to soak up any extra oil.
  5. Ready to serve.
