Zucchini Date Muffins

Last time I’ve made zucchini almond cake, it tasted so good,  and the other day I made this zucchini date muffins. I never thought that zucchini (vegetable :-)) not only served as appetizer or main course but also perfect for dessert. I ate this for breakfast and coffee. You could serve it with powder sugar or maple syrup, mmm yummy. For step-by-step instructions click here.

Zucchini Date Muffins


  • 200g Zucchini
  • 15 pieces Dates, pitted
  • 2 Eggs
  • 100g Flour
  • 3 Tablespoons Sugar
  • 5 Tablespoons Oatmeal
  • 1 teaspoon Baking soda
  • 4 Tablespoons Walnut oil
  • a pinch of Salt
  • Additional: Maple syrup or powder sugar


  1. Wash and grate the zucchini.
  2. Chopped the dates.
  3. Beat eggs, put in a bowl, add sugar, whisk it.
  4. Add flour, oatmeal, baking soda, walnut oil and salt.
  5. Mix it with grated zucchini and chopped dates.
  6. Pour the batter into silicon muffin form.
  7. Bake 180°C for 20 minutes (preheat before).
  8. Serve with maple syrup or powder sugar
