I’ve made this rice dish last night, Actually it serve as side dish, but I’m a rice-eater, so I ate this as main course. It’s a little bit boring if you just steam the rice, I added grated zucchini and grated cheddar cheese after cooked the rice, season with garlic powder, salt and pepper, it was perfect rice dish that I ever had. On this recipe I used Basmati rice, it’s a long grain rice, which is traditionally from South Asia. It has a typical pandan-like flavor caused by the aroma. Zucchini Cheddar Cheese Rice

Ingredients
  • 200g Basmati rice
  • 450ml chicken or vegetable broth
  • 1 zucchini (300g), grated
  • 150g shredded cheddar cheese
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • 1-2 tablespoons milk
Instructions
  1. Combine the rice and the broth in a medium saucepan. Bring to boil, reduce the heat, cover and let the rice simmer for 15-20 minutes until the rice is tender.
  2. Remove the rice from the heat, stir in grated zucchini, cheese and garlic powder. Add salt and pepper to taste. Add a tablespoon of milk if needed. Serve warm.
