First recipe this year! yup I’ve made this yummy whole wheat blueberry yogurt scones this morning and I want to post the recipe right away today. I’ve bought fresh blueberry at supermarket, even though it’s not berry season this month, but somehow they sold it.

On this recipe I combined all purpose flour with whole wheat flour. I used butter from refrigerator, so it’s hard enough to grate it. When you combining the dough with blueberries, do it very slowly so that you don’t squeeze much the fresh blueberries.

Whole Wheat Blueberry Yogurt Scones

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 100g cold butter, grated
  • 1 cup fresh blueberries,washed
  • 1 cup Greek yogurt
  • 1 egg

Instructions:

  1. Preheat oven 200°C/400°F.
  2. In a bowl, combine the flour,sugar,baking powder and baking soda.
  3. Add grated cold butter to the flour mixture. Combine well.
  4. Prepare small bowl, combine yogurt with egg. Pour into the the flour mixture, stir and combine well.
  5. Stir in the blueberries.
  6. Dump the dough onto floured work surface. Knead slowly for few times.
  7. Make a ball form and press with palm of your hand to make disc form. Divide into 8 pieces (cut wedges).
  8. Transfer to baking sheet underlined with parchment paper.
  9. Bake for 12-15 minutes.

    Sorry, but these did not work out for me 🙁 They took 40 minutes to cook and ended up close to burnt. The family thought them kind of bland so we spread some honey-cinnamon butter on top.

    • Sorry to hear that 🙁 but I’ve written on recipe that it should be bake 12-15 minutes. I don’t know why you baked it for 40 minutes?. Anyway, great idea to spread honey-cinnamon butter on top 🙂
