This walnut raisin banana bread is perfect to serve for breakfast with your morning coffee, it’s very simple to make and the ingredients are very healthy, normally I made only just simple banana bread for breakfast but this time with additional walnut and raisins made it more tasty. So have a nice try!.

Walnut Raisin Banana Bread

Ingredients:

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 tablespoon chia seeds
  • 1/2 cup Greek yogurt
  • 3 tablespoons sugar
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • pinch of salt
  • 1/2 cup melted butter
  • 1/2 cup raisins
  • 1 cup walnuts, chopped

Instructions:

  1. Preheat oven 180°C/ 350°F.
  2. In a bowl, combine mashed banana with eggs, chia seeds, Greek yogurt and sugar, mix well.
  3. In another bowl, combine dry ingredients; flour, baking soda, cinnamon powder and salt.
  4. Add dry ingredients to wet ingredients, stir with rubber spatula.
  5. Pour the melted butter, combine well.
  6. Add raisins and chopped walnuts, mix well.
  7. Prepare silicon loaf form, pour the batter.
  8. Bake 180°C / 350°F for 30-35 minutes.
  9. Remove from over, cool down, slice and ready to serve.
