Tofu Coconut Milk Curry Soya Sauce

This is one of my favorite dinner, Tofu coconut milk curry soya sauce.  I’ve bought the white tofu at Asia shop, I washed and cut diced the tofu. then marinated it with soya sauce, curry powder, combine with red bell peppers and cooked in coconut milk, serve with steamed rice, mmm delicious. Coconut Milk Tofu Soya Sauce

Ingredients
  • 500g Tofu, diced
  • 2 onions, chopped
  • 1 clove garlic, minced
  • 1 red bell pepper, sliced
  • 3 Tablespoons olive oil
  • 100ml vegetable stock
  • 200ml coconut milk
  • a pinch of salt
  • Marinade for tofu:
  • 8 Tablespoons soya sauce
  • 100ml coconut milk
  • 1 Tablespoon curry powder
Instructions
  1. Mix marinade ingredients in a bowl, marinade dice tofu for 30 minutes.
  2. Heat olive oil in a pan or wok with medium heat, saute onion, garlic and paprika for 3-5 minutes, add tofu (without the rest of marinade), cook another 5 minutes.
  3. Add coconut milk, vegetable stock and the rest of marinade, cook another 10 minutes with low heat.
  4. Serve with steamed rice.
