Sweet Potato Pie

I love sweet potato, always combine this root vegetable on my menu, especially dessert, I’ve made this sweet potato pie many times, last time I’ve made this as we had dinner together at Christmas. I can’t describe how great the taste as the piece of the pie comes into my mouth and melt in your tongue. Yummmmmy! This recipe adapted from Dad’s Sweet Potato Pie from JoyTheBaker.Com

Sweet Potato Pie

Ingredients:

  • Pie Crust:
  • 300g flour
  • 200g butter
  • 50ml milk
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • Filling:
  • 500g mashed sweet potato (sweet potato puree)
  • 100g butter
  • 50g brown sugar
  • 3 eggs
  • 200ml milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • a pinch of vanilla powder

Instructions:

  1. To make the pie crust:  Combine flour, sugar and salt in a bowl, add cold cubed butter, mash and mix it with your hand, the butter pieces will be like oat flakes, pour milk, mix with fork, if it's too wet, add some flour. Wrap the dough with plastic wrap and keep it on refrigerator for 30 minutes. Roll the dough on floured surface, make round shape and transfer it into pie pan, trim the edge with your finger. Cover with plastic wrap, put again on refrigerator about one hour, during this time you can make the filling and preheat oven 180°C.
  2. To make the filling: In a large pot, mix and simmer mashed sweet potato, milk, brown sugar, cinnamon, nutmeg, salt, vanilla powder for 5 minutes. Whisk eggs and pour it into the pot, whisk well. Pour the prepared filling into pie crust, bake 180°C for 10 minutes, reduce the heat into 170°C , bake 40-45 minutes, check the doneness by shaking the baking sheet until the center of the pie lightly jinggle.
