Warm regards from Florida! yes, my husband and I have holiday for 3 weeks in USA. How’s your Christmas Holiday with your family? I hope you all had a great time. I’m going to post recipe that I’ve made few months ago. Maybe it will be great dish for your New Year’s Eve menu. It’s stuffed zucchini…!!! Zucchini boat filled with ground beef and cheese …mmm it was so delicious.

Stuffed Zucchini


  • 3 zucchini, washed, cut length ,scoop the middle part and set aside
  • 200g ground beef
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1/4 cup water
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup grated cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup chopped parsley
  • 1/2 cup shredded mozzarella cheese


  1. Prepare baking sheet, underlined with parchment paper or aluminum foil.
  2. Arrange the prepared zucchini onto baking sheet.
  3. For the stuffing: Heat oil in a pan, sauté onion and ground beef, add diced bell pepper, cook for 7-10 minutes. Add water, soy sauce, Worcestershire sauce. Remove from heat, stir in cheddar cheese, cream cheese, the middle part of the zucchini and chopped parsley.
  4. Fill the stuffing into prepared uncooked zucchini.
  5. Bake 180°C for 25 minutes.
  6. Add shredded mozzarella cheese, bake for another 3 minutes.
  7. Remove from the oven, arrange on the plate and ready to serve.
