Stuffed mini sweet bell peppers as appetizer… great idea right? I’ve made this few days ago as a small bites before eating dinner, surprisingly, it tasted so good! Actually you can eat the mini sweet bell peppers just like that, but it didn’t really like it. I filled the mini peppers with mixture of feta cheese/goat cheese, fresh basil leaves, black olive and cherry tomatoes.
Be careful when you bake it , some of the filling may be split out. Here I used baking sheet to bake it, but I suggest, you use baking dish, so that the mini peppers in stand position, not lay down position.
