Strawberry cheesecake for dessert ! or for coffee time would be also great idea. This month you can find fresh strawberry everywhere because it’s strawberry season, you can even pick your own strawberries at strawberry field. I served this strawberry cheesecake with strawberry sauce, you can also serve it ice cream if you like. For strawberry sauce recipe, check out at my post, Chocolate crêpes with strawberry sauce.

Ingredients
  • For the Crust:
  • 2 cups flour
  • ½ cup brown sugar
  • 1 cup butter, softened
  • For the Cream Cheese Layer:
  • 3 packages cream cheese / quark (450g), softened
  • 2 tablespoons sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • For the Strawberry layer:
  • 2½ cups fresh strawberries, hulled and diced
  • For the Topping:
  • 1 cup flour
  • 1 ½ cup brown sugar
  • ½ cup oats
  • ½ teaspoon cinnamon powder
  • ½ cup butter, softened
  • For the Garnish:
  • Strawberry sauce (optional)
Instructions
  1. Preheat oven to 350°F/180°C.
  2. Line a rectangular pan. Grease with butter.
  3. For the Crust: Mix flour and brown sugar together in a bowl. Add butter in, combine with a fork or blender until crumbly. Spread mixture in the bottom of the pan and press it down. Bake for 15 minutes. Meanwhile, prepare the other layer.
  4. For the Cream Cheese Layer: Beat cream cheese and sugar together in a large bowl until smooth with food processor/blender. Add eggs and vanilla extract, mix until combined. Pour over the crust.
  5. For the Strawberry Layer: Spread the diced strawberries over the cream cheese mixture.
  6. For the Topping: Combine flour, brown sugar, oats, and cinnamon in a medium bowl. Add butter, mix with a fork or blender until crumbly. Spread over the strawberries.
  7. Bake for 40-45 minutes until the topping turns into golden brown. Let it cool for about 30 minutes and then refrigerate at least 3 hours or overnight.
  8. Slice/cut the cheesecake into bars. Portion it on a plate.
  9. Drizzle with strawberry sauce (optional) and garnish with strawberries.
