Spinach Polenta

Polenta is cornmeal,  boiled into a porridge and eaten directly or baked, fried or grilled.  I’ve made this spinach polenta last night as side dish for my dinner, fried tuna fish. So delicious… and easy. On this recipe I used frozen spinach, I  thawed first on microwave and mixed it into polenta porridge. Here I cooked the polenta with milk, you can also use broth. People in Germany love to eat this, serve with meat dish.

Ingredients
  • 200g polenta
  • 100g spinach
  • 400ml milk or vegetable broth
  • 2 tablespoons butter
  • 2 onions, peeled, chopped
  • 1 clove garlic, minced
  • salt and pepper
  • garnish: parsley
Instructions
  1. Preheat oven 180°C.
  2. Heat butter in soup pan with medium heat, sauté onion and garlic for few minutes. Reduce the heat, add polenta, stir it, pour milk or broth, stir well, simmer for 2-3 minutes.
  3. Add spinach, stir well. Season with salt and pepper. Remove the pan from stove.
  4. Prepare square baking dish, grease with butter.
  5. Pour the spinach polenta into baking dish, bake for 15-20 minutes.
  6. Cut dice the polenta, garnish with parsley.
  7. Ready to serve.
