Spaghetti Squash Mushroom Tomato

Spaghetti squash mushroom tomato served with grated parmesan cheese …hmm interesting, at the beginning I was thinking what does it mean? is it cooked with spaghetti? is it serve with as spaghetti companion?Nope. The form of the flesh after cooked are looks like spaghetti if you scoop it with fork. It serve as substitute for spaghetti. Ach so!  Spaghetti squash is a long orange-yellow color squash, it can be baked/roasted in oven or heat at microwave, you could cut it into half first before bake or without cutting it but pierce it first with knife (avoiding explosion).

If you bake the whole squash, it tools 50minutes until one hour, but easier because you don’t have to cut it first, which is the skin is so hard and you need some energy to hack it. On this recipe I add some stuff for the filling of the squash, it’s mixed of red pepperoni, tomatoes and brown Champignon mushroom. For topping, grated parmesan cheese is delicious.:-)

Spaghetti Squash Mushroom Tomato


  • 1 Spaghetti squash
  • 200g brown Champignon mushroom, sliced
  • 4 Tomatoes, diced
  • 4 Red chili pepperoni, sliced
  • 1 Onion, chopped
  • 1 Garlic, minced
  • 2 Tablespoons Butter
  • 4 Tablespoons grated Parmesan cheese
  • Salt and black pepper


  1. Preheat oven 180°C.
  2. Prepare baking sheet, make some scratch on spaghetti squash or pick few times with fork.
  3. Bake for 40-50 minutes.
  4. Remove from the oven, divide (lengthwise) into half, remove the seeds.
  5. By using fork, take the flesh so that the form looks like spaghetti-form.
  6. For filling, heat butter in a pan.
  7. Sauté chopped onion and minced garlic. Add pepperoni and mushroom, stir for 7-10 minutes.
  8. Add diced tomatoes, continue stirring, season with salt and pepper.
  9. Fill it inside the squash, serve with grated parmesan cheese.
