The idea come up when I saw cheddar cheese on my refrigerator, and thought about prepare dinner with cheese. I have stock of mushrooms and spaghetti pasta, it’s perfect timing to make it. Spaghetti Mushroom Cheese Sauce

  • 200g spaghetti
  • 500ml water
  • 1 tablespoon butter for spaghetti
  • 5 pieces white mushrooms, cleaned, sliced
  • 150g cheddar cheese, grated
  • 1 stick spring onion/ 1 onion, peeled and sliced
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 200ml milk
  • 100ml heavy cream
  • salt and black pepper
  • garnish: chopped parsley
  1. Heat water and one teaspoon salt in a pot.
  2. Boil spaghetti according to cooking instructions.
  3. Add sliced white mushroom, cook together with the spaghetti.
  4. After the pasta tender (al dente), add 1 tablespoon butter, stir it.
  5. For the cheese sauce; heat butter in a saucepan, add sliced onion, fry for few minutes, add flour, stir it.
  6. Pour milk and cream, whisk together for about 5 minutes until no lumps.
  7. Add grated cheddar cheese, continue stirring. Season with salt and black pepper.
  8. You can mix boiled pasta and mushroom with the cheese sauce in a pan or portion the pasta on the plate first, then pour the cheese sauce on top of the pasta.
  9. Garnish with chopped parsley.
