Spaghetti Chanterelle Mushroom Sauce

Chanterelle mushroom is a fungus and considered as edible mushroom, in Germany called Pfifferling. It is one of gourmet fungi with high price when you eat at restaurant. Brush the mushroom before use it. Sauté it with butter, taste good when cooked as cream sauce. I served this mushroom cream sauce with boiled spaghetti, just simple dinner. It’s also perfect when you serve with grilled chicken. In Germany people served it also with veal cutlet. Spaghetti Chanterelle Mushroom Sauce


  • Sauce:
  • 200g fresh Chanterelle mushrooms
  • 2 Onions
  • 1 Garlic
  • 3 Tablespoons Olive oil
  • 1 Tablespoon Butter
  • 1 Tablespoon Flour
  • 50ml Vegetable broth
  • 200ml Cream
  • Salt and Black pepper
  • ---------------------------------------------------------------------
  • Pasta:
  • 200g Spaghetti
  • 1 Liter Water
  • 1 teaspoon Salt
  • 1 teaspoon Butter
  • Garnish:
  • chopped Parsley


  1. Clean the mushroom with brush, chop it into small pieces.
  2. Chop onion, crush the garlic.
  3. Heat olive oil in a pan with medium heat, add butter, sauté the onion and garlic
  4. Add the chanterelle, sauté for 5 minutes, add flour, season with salt and black pepper, pour the vegetable broth and cream, cook for another 10 minutes or until the sauce becomes thick.
  5. Boil water in a pot, add salt , put the spaghetti or pasta , boil for about 20 minutes until al dante or cook according to cooking pasta instructions. Remove the water, add the butter (so that the pasta not become sticky), stir it . Arrange pasta on plate and pour some of the chanterelle mushroom sauce on top of it. Garnish with chopped parsley.
  6. Enjoy your meal!


On this recipe I used vegetable broth, you could use white wine for better taste.
