Spaghetti with Butternut Squash Sage Sauce , mmm sound yummy isn’t it? Sage is perfect match with Butternut squash. I’ve tried different kind of recipes with butternut squash such as; Roasted Butternut Squash Fries and Rosemary Butternut Squash. I love pumpkin, especially Butternut Squash. Even it’s not pumpkin season, I always buy this pumpkin. I found this recipe on internet and tried it, wow amazing idea, one of the best recipe. I fried the sage to make it crispy, and mixed pureed butternut squash with grated gouda cheese, at the end combined it with boiled spaghetti. You should try this one.

Spaghetti Butternut Squash Sage Sauce


  • 200g spaghetti pasta
  • 1 medium butternut squash, peeled, diced
  • 8 pieces sage leaves
  • 3 tablespoon olive oil
  • 250ml vegetable broth
  • 100g gouda cheese, grated
  • 1 onion, chopped
  • 2 garlic, minced
  • a pinch of nutmeg powder
  • salt and pepper


  1. Bring a large pot of water to a boil. Add salt and butternut squash. Cook until soft, about 15 minutes.
  2. Heat olive oil in a pan, fry the sage leaves until crisp, about 30 seconds. Transfer to a paper towel to drain. Season with salt. Set aside.
  3. Boil pasta according to package instructions.
  4. Remove the squash from the water and place in a large bowl. Place the cooked butternut squash in a large food processor or blender. Add broth, puree the squash until smooth.
  5. In a large deep skillet, heat 1 tablespoon of olive oil. Add chopped onion and minced garlic and sauté until soft, 3-5 minutes. Add into pureed butternut squash. Stir in the Parmesan or Gouda cheese. Season with nutmeg, salt, and pepper.
  6. Add the boiled pasta and stir until pasta is well coated. Chop some of fried sage leaves and stir them into the pasta. Serve the pasta with remaining fried sage leaves and additional Parmesan or Gouda cheese.


You can substitute gouda cheese with parmesan cheese
