Soba Noodle with Honey Ginger Sesame Soy Sauce

Normally I eat soba noodle only at restaurant. I was at organic shop and I’ve seen Buckwheat noodle , in Japanese called Soba noodle. So, I’ve made soba noodle with honey ginger sesame soy sauce for our dinner menu. It’s very easy and delicious. I served this with fried tofu.

Soba Noodle with Honey Ginger Sesame Soy Sauce

Ingredients:

  • 1 bund (100g) dried soba noodle / buckwheat noodle
  • 1 liter vegetable broth for boiling the noodle
  • 1 cup chopped scallions
  • 1/4 cup chopped cilantro or parsley
  • 1-2 tablespoons sesame seeds
  • For the sauce:
  • 3 tablespoons sesame oil
  • 2 tablespoons minced ginger
  • 2 tablespoons honey
  • 2 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon chili flakes
  • salt and pepper (optional)

Instructions:

  1. Bring vegetable broth into boil, cook soba noodle according to cooking instruction. Drain into colander and rinse with cold water. Set aside.
  2. Mix and stir all sauce ingredients in small bowl, heat sauce pan, simmer for a while until all combined. Remove from heat.
  3. Combine the sauce with soba noodle, stir well.
  4. Add scallion, parsley and sesame seeds.
