This recipe is very simple and didn’t take a long time to cook it, healthy for appetizer or as a side dish. When you have  zucchini and tomatoes at home, you should try this recipe, of course you should also have the dry ingredients that I’ve used here, it’s indian herbs, I love indian cuisine, that’s why I have many stocks of Indian herbs. At least you have ‘Garam Masala’ at home, you could find it at supermarket. It is blend of ground spices, mixture of cumin, black pepper, cardamom, cloves and cinnamon.

I’m trying to find recipes with zucchini, actually I don’t like zucchini as vegetables, I made it as dessert, few weeks ago I’ve made Zucchini almond cake and Zucchini dates muffin. That was really great recipes.

Sautéed zucchini and tomato

Ingredients:

  • 300g Zucchini
  • 2 big Tomatoes or 5 Cherry tomatoes
  • 4 Tablespoons Olive oil
  • 1 teapoon ground Cumin
  • 1 teaspoon ground Corriander
  • 1 teaspoon Paprika powder
  • ½ teaspoon Chili flakes
  • ½ teaspoon ground Turmeric
  • ½ teaspoon Black pepper
  • ½ teaspoon Salt

Instructions:

  1. Wash and cut dice zucchini.
  2. Wash and cut into half the cherry tomatoes.
  3. Heat a pan, add olive oil,.
  4. Add dry ingredients (cumin, corriander, paprika powder, chili flakes, turmeric, black pepper and salt), mix with spatula for one minute.
  5. Add diced zucchini, stir for 5 minutes.
  6. Add the tomatoes, continue cooking for few minutes until tender but not over cooked.
  7. Arrange on a plate, ready to serve.
