Roasted Cinnamon Butternut Squash

This roasted cinnamon butternut squash is perfect to serve as side dish for your fish, poultry or meat dish. What you need is butternut squash, olive oil, ground cinnamon, brown sugar, salt and black pepper. You can eat this as snack or combine it into your salad.

Roasted Cinnamon Butternut Squash


  • 1 large butternut squash, peeled/seeded, cut into cubes
  • 3 Tablespoons olive oil
  • 2 teaspoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper


  1. Preheat oven to 400°F/200°C with rack on middle position.
  2. Line baking sheet with aluminum foil.
  3. In a large bowl, combine olive oil, brown sugar, ground cinnamon, salt and black pepper. Combine well.
  4. Toss the squash until thoroughly coated.
  5. Transfer to foil-lined baking sheet, spread it.
  6. Roast about 30-40 minutes.
  7. When edges are browned and cubes are fork-tender, remove from oven immediately.
