Rice Beluga Lentils Cauliflower Sauce

rice beluga lentilThis is my delicious dinner recipe, rice beluga lentils cauliflower sauce. I love rice dish, yesterday I posted cauliflower sauce recipe, and I still have the rest of the sauce. I mixed it with rice and add some beluga lentils, it black color lentil, lens-shape form, legume family and good source of iron. The rice and lentils are cooked in vegetable broth for better flavor.

Rice Beluga lentils Cauliflower Sauce


  • 50g Beluga lentils
  • 200g Rice, uncooked, washed
  • 200g Cauliflower Sauce
  • 500ml Vegetable broth
  • 4 Shallots, sliced
  • 2 cloves Garlic, minced
  • 2 Tablespoons oil or butter
  • Salt and pepper
  • 1 tablespoon chopped Chives


  1. Heat butter or oil in a pot.
  2. Sauté sliced shallot and minced garlic.
  3. Add beluga lentils, stir.
  4. Add rice, stir.
  5. Pour vegetable broth, cook for 25-30 minutes or until the broth reduced.
  6. Pour Cauliflower sauce, cook another 3-5 minutes.
  7. Season with salt and pepper, stir.
  8. Serve with chopped chives.

  2. I just bought a small bag of beluga lentils the other day, because they are such a beautiful color but I hadn’t decided what to do with them. I was thinking perhaps a salad but I am sure a few will go towards this tasty dish. Very hearty and filling on a cold day, I am sure.
