Quinoa grain has been called a super food , it’s very high in protein. Cooked quinoa can be combined into your salad, side dish etc. After I made  Jalapeño red quinoa bites , I start to creating recipe with quinoa. This time I’ll post red quinoa stuffed yellow bell peppers recipe. If you don’t have red quinoa, you can use the white one. You don’t have to use the yellow bell peppers like I did, red or green bell pepper also perfect :-).

Red Quinoa Stuffed Yellow Bell Peppers

Ingredients:

  • 2 yellow bell peppers, halved, remove the seeds
  • 1 liter water for boiling
  • --------------------------------
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 cup cooked red quinoa
  • 6 cherry tomatoes, halved
  • 2 stalks spring onion, sliced
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon ground cayenne pepper
  • a pinch of ground nutmeg
  • salt and pepper to taste
  • 1 tablespoon chopped parsley

  • 3 tablespoons grated parmesan cheese for topping

Instructions:

  1. Bring water in a pot to boil, cook bell peppers for 10 minutes. Remove the bell pepper from water, set aside.
  2. Heat olive oil in a pan, sauté chopped onion and minced garlic for few minutes, add cooked quinoa, cherry tomatoes and sliced spring onion. Spice with paprika powder, ground cayenne pepper and ground nutmeg. Season with salt and pepper. Cook for about 5 minutes. Spread with chopped parsley.
  3. Preheat oven 180°C / 350°F.
  4. Stuff all the cooked bell pepper with quinoa mixture. Top with grated parmesan cheese.
  5. Bake for 20 minutes. Remove from the oven.
  6. Ready to serve.
