Quinoa with roasted butternut squash

Ingredients

  • For Quinoa:
  • 1 cup quinoa (I combined red and white quinoa)
  • 3 cups vegetable stock
  • 2 cloves garlic,crushed
  • 1 sprig rosemary, chopped
  • 2 tablespoon olive oil
  • salt
  • black pepper 
  • -------------------------------------
  • For Roasted Butternut Squash:
  • 1/2 butternut squash, cubed
  • 3 tablespoons olive oil
  • 1 teaspoon cinnamon powder
  • pinch of nutmeg powder
  • pinch of cayenne pepper powder
  • 1 teaspoon dried marjoram
  • salt
  • pepper
  • ---------------------------------
  • Garnish:
  • chopped parsley

Instructions

  1. Preheat the oven to 400°F/200°C.
  2. In a bowl, combine olive oil, cinnamon, nutmeg, cayenne pepper, marjoram, salt and pepper. Combine well.
  3. Toss the butternut squash with oil and spice mixture.
  4. Arrange coated squash on a baking sheet in a single layer.
  5. Roast for 20 minutes or until squash is tender and lightly browned.
  6. While the squash is roasting, rinse quinoa under cold water until water runs clear.
  7. Place quinoa and vegetable stock in a medium saucepan. Bring to a boil, add crushed garlic, chopped rosemary and olive oil. Reduce to a simmer, cover and cook until liquid is absorbed, about 15 minutes. Season with salt and black pepper.
  8. Combine the cooked quinoa and roasted squash in a large bowl.
  9. Garnish with chopped parsley.
