The weather is so cold today, it’s autumn, the day is short and at 16:00 already dark. Now, it’s about 6°C in Hannover, Germany. This week I’ve made some soup recipe, warm soup is always perfect for cold weather. Check out my latest soup recipe “Butternut squash sage soup”. This one is Quail egg Potato Carrot Soup, I’ve tried to make something easy to cook, carrot and potato is always available in my kitchen, I found quail eggs at Asia shop, just boiled it and mixed with vegetable soup, you could also use other vegetable besides potato or carrot.

Quail egg Potato Carrot Soup


  • 200g Quail egg, boiled
  • 800g Potatoes, diced
  • 300g Carrots, sliced
  • 1 Liter Vegetable broth
  • 100g Spring onion, sliced
  • 6 Shallots, sliced
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 Tablespoon Olive oil
  • Garnish : chopped Parsley


  1. Remove the skin of the boiled quail eggs, set aside.
  2. Heat oil in a pan, sauté sliced shallot, minced garlic for few minutes. Set aside.
  3. Boil vegetable broth in a pot, add diced potatoes, sliced carrots. Cover the pot.
  4. Add sautéed shallot and garlic into the soup pot. Cook for 20 minutes.
  5. Add boiled quail eggs and sliced spring onion.
  6. Season with salt and pepper.
  7. Garnish with chopped parsley.
