Pistachio lemon cookies! I love this cookies, the lemony flavor from lemon juice and lemon zest. The nutty flavor from pistachio nuts. It will make you addicted to eat this. Enjoy this with a cup of coffee or tea, yummy!

Pistachio Lemon Cookies


  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup lemon juice
  • zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 1/2 cup flour, sifted
  • 2 teaspoon corn starch
  • 1/4 cup chopped pistachio (25g)


  1. Cream together butter and powdered sugar in an stand mixer.
  2. Add zest, lemon juice and vanilla extract. Beat until combined.
  3. Add flour, corn starch and chopped pistachio. Beat until a smooth dough forms.
  4. Turn dough onto a lightly floured surface and divide in half.
  5. Place each half into a large piece of plastic wrap or baking paper in a log. Roll paper around log, and twist the ends.
  6. Place in fridge for about an hour, or until firm.
  7. Preheat oven to 350°F/180°C. Line your baking sheet with parchment paper.
  8. Slice the cookie dough log, place onto prepared baking sheet.
  9. Bake 350°F / 180°C for 10 minutes. Remove from oven and cool on sheet for 5 minutes.
