Pineapple bars…! I love pineapple, it’s tropical and exotic fruit, it’s not so easy to fine ripe fresh pineapple in Germany, normally I wrapped the fruit with newspapers for few days in a dark room and it will be ripe. This time I made pineapple bars for dessert. First, you have to peel the pineapple skin, cut lengths into 4, remove the middle part, cut into small chunks, and blend them with food processor. So you got pineapple puree ready, follow the next instructions below.

Pineapple Bars


  • Crumble ingredients:
  • 1 1/2 cup flour
  • 1 cup oats
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon baking soda
  • pinch of salt
  • -------------------
  • Pineapple filling ingredients:
  • 2 cups (500g) pureed pineapple
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract


  1. Combine all crumble ingredients. Set aside.
  2. Whisk all pineapple filling ingredients in a pot, bring to boil and simmer for 10 minutes. Remove from heat.
  3. Preheat oven 180°C.
  4. Prepare rectangular baking sheet, grease with butter, pour 1/2 of crumble mixture. Press with spoon or with palm of your hand. Bake for 10 minutes.
  5. Pour all boiled pineapple filling into baked crust, then pour another half of the crumble mixture. Make sure the filling are covered with the crumble.
  6. Bake 180°C for another 20 minutes. Remove from the oven. Cool down.
  7. Cut into square form. Ready to serve.
