Noodle with Bok Choy and Shiitake Mushrooms

I’ve just made this stir-fried noodle with bok choy and shiitake mushrooms today for lunch, it was so delicious and quite easy to make as long as you have Asian seasoning like soy sauce, mirin and sesame oil. I used frozen fresh egg noodles on this recipes and added some black and white sesame seeds.

Noodle with Shiitake Mushrooms and Bok Choy


  • 2 portions fresh egg noodles
  • 300g bok choy/pak choi, washed, chopped
  • 200g fresh shiitake mushroom, sliced
  • 1 cup chopped scallions
  • 5 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons sunflower oil
  • 3 tablespoons soy sauce/ tamari
  • 1 tablespoon mirin
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoons black sesame seeds
  • 1 tablespoon white sesame seeds


  1. Prepare a pot, bring salted water to a boil. Cook noodles according to cooking instructions, drain and rinse with cold water.
  2. Combine soy sauce, mirin, honey and sesame oil in a small bowl. Set aside.
  3. Prepare a pan, heat oil, sáute garlic and ginger, add scallions and mushrooms. Give a quick stir to on high heat for 5 minutes. Pour the soy sauce mixture, stir well, add bok choy, add cooked noodles, continue stirring until bok choy is wilted, add black and white sesame seeds, stir until all combined.
