Mushroom Thyme Quinoa

mushroom thyme quinoaI’ve made mushroom thyme quinoa yesterday for dinner, according to my opinion, quinoa taste good when you combine it with something cheesy, I don’t know, maybe because I love cheese :-), of course everybody has their own favorite how to prepare quinoa. On this recipe I mixed the quinoa with brown Champignon mushrooms and thyme, at the end I sprinkle it with grated cheddar cheese (look at the picture below). You can stir in the cheese together with the mushroom quinoa (at the end it looks like the picture above). You can also use grated gouda cheese or parmesan cheese.

Mushroom Thyme Quinoa

Ingredients:

  • 200g brown Champignon mushrooms, brushed, sliced
  • 200g Quinoa
  • 1 tablespoon chopped fresh thyme
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/3 cup white wine
  • 3 cups vegetable broth
  • 1 cup grated cheese (parmesan, gouda or cheddar)
  • salt
  • black pepper

Instructions:

  1. Heat oil in a pot with medium heat.
  2. Sauté onion for one minute until softened, add minced garlic, add quinoa, stir for another one minute. Pour white wine, stir until no more liquid (absorbed).
  3. Pour vegetable broth, add chopped thyme and sliced mushrooms, season with salt and black pepper, cook for 15 minutes,stir for few times during cooking.
  4. Stir in grated cheese or separate the cheese first and sprinkle it when you already portion the mushroom quinoa on a plate.
