Mung beans porridge with coconut milk or known as “bubur kacang hijau” is Indonesian favorite dessert, It’s made by boiling the mung beans, cooked in coconut milk and palm sugar, flavored with panda leaves, at the end serve with coconut milk. You can boil the coconut milk together with mung beans or serve at the end separately. It can be eaten also for breakfast.

Indonesian mung beans porridge with coconut milk

Ingredients:

  • 200g mung beans
  • 500ml water for boiling mung beans
  • 100g palm sugar (block)
  • 100ml water to dissolve/boil the palm sugar
  • 4 pandan leaves, knotted
  • 300ml coconut milk
  • 1/2 teaspoon salt

Instructions:

  1. Soak mung beans over night (12 hours).
  2. Boil mung beans with water in a pot for 30 minutes.
  3. Boil 100ml water with blocks palm sugar and 1 pandan leaf.
  4. Pour it into a pot with mung beans. Stir.
  5. On separate pan, heat coconut milk,1 pandan leaf and salt with low heat for 5 minutes.
  6. Ready to serve.
