Matcha Macarons

matcha-macaronsA macaron is a sweet meringue-based confections made from eggs, icing sugar, ground almond and food coloring. I know macarons since I was working at Hotel, we’ve learned and tried (food testing) many international cuisines. Normally they offer Café Gourmand as coffee time or tea time, it’s mix of mini desserts such as ; crème brûlée, mousse au chocolat, mille feuille, chocolat fondant or macarons. I’m looking for macarons recipe on internet and found this website Französisch Kochen from Aurélie Bastian, she comes from France but live in Germany now. At the end, I tried Matcha Macarons because I had stock of Matcha green tea powder at home.

Matcha Macarons

Ingredients:

  • 45g ground almond
  • 65g icing sugar
  • ------------------------------------------------------------------------
  • 35g egg white (from 1 egg, take only the egg white)
  • 10g granulated sugar
  • -------------------------------------------------------------------------
  • 1/2 teaspoon Matcha powder
  • 2 teaspoons water
  • -------------------------------------------------------------------------
  • For Ganache:
  • 50g white chocolate block
  • 1 Tablespoon heavy cream
  • what you need: piping bag

Instructions:

  1. Mix ground almond with icing sugar by using sieve.
  2. Whisk egg white with granulated sugar.
  3. Mix Matcha powder with water. Add it into egg white-mixture.
  4. Add some of mixed ground almond and icing sugar. Stir it with spatula, continue until finish.
  5. When it turns into thick consistency, fill in into piping bag.
  6. Prepare baking sheet underlined with baking paper.
  7. Make 2cm size coin-form of macarons from piping bag. Keep 15 minutes rest period before baking.
  8. Bake 140°C for 10-12 minutes (pre-heat before). Cool down.
  9. For filling; Melt white chocolate, make the heavy cream warm, mix together, stir it.
  10. Take one of the macarons, add one teaspoon of the filling, take another of the macaron.
  11. Enjoy your macarons.
