Mango Coconut Chia Seed Pudding

If you have chia seeds at home and don't know what to do with them, maybe you should try this one, dessert mango coconut chia seed pudding. Basically you just need to soak the seeds first with coconut milk and other ingredients, portion it with mango chunks, it's cute and yummy dessert ever! :-).  
Mango Coconut Chia Seed Pudding
  • 1¼ cup coconut milk
  • 6 tablespoons chia seeds
  • 4 tablespoons shredded coconut
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 fresh ripe mango, diced and chilled
  1. In a bowl, combine the coconut milk, chia seeds, shredded coconut, maple syrup and vanilla extract. Whisk until well combined.
  2. Let the mixture sit for about 30 minutes at room temperature.
  3. Whisk once more, cover, and refrigerate for at least 3 hours (overnight will be better).
  4. Layer some pudding and diced mango into serving glasses.
  5. Serve immediately or keep in the fridge until ready to serve.
