Jalapeño Red Quinoa Bites

Quinoa grain has been called a super food, the grain is good source of protein, calcium, magnesium and iron. It’s gluten-free and considered easy to digest. It’s very useful for vegans and those who are lactose intolerant.

I’ve made this jalapeño red quinoa bites as appetizer / small bites before dinner. You can also use the golden quinoa, check what’s the difference between red and golden quinoa and How to cook Quinoa from The Kitchn.  You can also use muffin cups to make this, here I used mini silicon rectangular form, so cute isn’t it?. This recipe enough for 2-3 persons, you can double the portion if you want. Reduce the amount of jalapeño for kids, don’t forget to remove the seeds. :-). Enjoy the mini jalapeño red quinoa bites!

Jalapeño Red Quinoa Bites


  • 1/2 cup quinoa, rinsed
  • 1 cup water (or broth)
  • 1 onion, finely chopped
  • 3 jalapeño peppers, seeded, diced
  • 2 garlic cloves, minced
  • 2 eggs, lightly beaten
  • 2 tablespoons cream cheese
  • 1 cup grated Cheddar cheese
  • Salt and Pepper to taste


  1. In a medium pan, cook quinoa with water or broth for 15 minutes or according to package directions. Let cool.
  2. Preheat oven to 350° F/180°C.
  3. In a large bowl, combine cooled quinoa, chopped onion, diced jalapeño, minced garlic, beaten eggs, cream cheese, grated Cheddar cheese, salt and pepper.
  4. Put a heaping tablespoonful of quinoa mixture into mini-rectangular silicon cups / muffin cups.
  5. Bake for 15 to 20 minutes, or until edges turn golden brown.
  6. Remove from oven and let cool for 5 minutes and then gently remove from pan to cool completely.
