I enjoyed this Jalapeño corn fritters as small bites or snacks in the afternoon with a cup of tea. It would be also perfect as appetizer before dinner. After I made Jalapeño Red Quinoa Bites few weeks ago, I still have some of the jalapeño in refrigerator, so I decided to make this jalapeño corn fritters. You can serve this snacks with any dips you have, I ate this just with chili sauce.

This recipe adapted from ClosetCooking.com with Jalapeno popper corn fritters.

Jalapeño Corn Fritters


  • 2 cups fresh corn (from 2 cobs corn, shredded)
  • 2 jalapeño, seeded, diced
  • 1/2 cup flour / corn flour
  • 1 egg
  • 1/2 cup grated cheddar cheese
  • 1/4 cup cream cheese
  • 1 teaspoon paprika powder
  • 1 teaspoon ground coriander
  • 2 stalks green onions, sliced
  • a handful of cilantro or parsley, chopped
  • 1 lime, zest and juiced
  • 2 tablespoons oil


  1. Mix the corn, flour, egg, cheddar cheese, cream cheese, jalapeños, paprika powder, coriander, green onion, parsley, zest and lime juice in a bowl.
  2. Form 2 tablespoons of the mixture into patties.
  3. Heat the oil in a pan over medium heat, cook the patties about 2-4 minutes per side, cook until golden brown on both sides.
