Indonesian sautéed water spinach

Indonesian sautéed water spinach or in Bahasa Indonesia called ‘Tumis Kangkung’ is favorite traditional Indonesian cuisine. This is my favorite dish, I eat this normally with steamed white rice and fried tempeh, you can find this water spinach vegetable at Asia store. Indonesian sautéed water spinach

Ingredients:

  • 200g fresh water spinach, trimmed, washed
  • 2 tablespoons oil for sautéeing
  • 3 shallots, sliced
  • 3 cloves garlic, sliced
  • 1 red chili, sliced
  • 1/2 cup dried shrimp
  • 1/4 cup water
  • 1 tablespoon palm sugar
  • 1 tablespoon sweet soy sauce
  • salt and pepper

Instructions:

  1. Separate leaves and stems of water spinach.
  2. Heat oil in a pan.
  3. Sauté shallots and garlic. Add dried shrimp and red chili, combine well. Add water spinach's stem, add water, let it boil, cook un until softened, add water spinach leaves, season with salt and pepper, stir well until soft. Add palm sugar, add soy sauce. Combine well.
  4. Serve with warm rice.
