Herb walnut muffins 

herb walnut muffinsI’ve made this savory muffin today, it tasted so great, rich of flavor of herb; basil, thyme and  rosemary. With the combination of walnut and parmesan cheese make this muffins taste so perfect (for me :-)). Actually, I quiet rarely to bake savory muffins, but after this time, I’ll bake more often.

Herb walnut muffins 

Ingredients:

  • 150g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg 
  • 1/2 cup canola or olive oil
  • 200g cream cheese or sour cream 
  • 10 fresh basil leaves, chopped
  • 3 sprigs fresh thyme leaves (2 teaspoons chopped thyme)
  • 1 sprig fresh rosemary, chopped (1 tablespoon chopped rosemary)
  • 50g walnuts, chopped (1/2 cup chopped walnut)
  • 1/2 cup grated parmesan cheese

Instructions:

  1. Preheat oven 180°C or 360°F.
  2. Combine dry ingredients (flour, baking powder, salt and pepper). Set aside.
  3. In a bowl, combine egg, oil and cream cheese. Add all chopped herb (basil, thyme and rosemary). Add dry ingredients, stir well. Stir in chopped walnut and grated parmesan cheese. Scoop into muffin pan ( about 9 muffin pieces).
  4. Bake 180°C for 20-22 minutes until golden brown.
