Grilled Eggplant Cucumber Yogurt Sauce

I’ve made appetizer dish for my dinner with grilled eggplant, served with cucumber yogurt sauce. This grilled eggplant with yogurt sauce recipe is  inspired by MarthaStewart.Com. You have to cut the eggplant lengthwise, brush with olive oil, season with salt and pepper and grill it. For the sauce, grate the cucumber, you don’t have to peel the skin,  you could remove the seed or just keep it. Squeeze it to remove the water that comes out from the cucumber. Season with salt and pepper, add yogurt, lemon juice. Ready to serve with the grilled eggplant.

Grilled Eggplant with Cucumber Yogurt Sauce
  • 2 eggplants
  • 5 tablespoons olive oil
  • coarse salt and ground black pepper
  • 1 small cucumber, seeded, coarsely grated, squeezed
  • 5 tablespoons Yogurt
  • 2 Tablespoons lemon juice
  • 1 tablespoon chopped parsley
  • Garnish: lemon wedges
  1. Heat the grill. Halve eggplants lengthwise, brush both sides of eggplant with olive oil, season with salt and pepper, grill until tender (about 5-7 minutes).
  2. In a small bowl, combine grated cucumber, yogurt, lemon juice, chopped parsley, salt and pepper.
  3. Serve the yogurt sauce with grilled eggplant. Garnish with lemon wedges (optional)
