I’ve made this goji berry mini muffins for breakfast. It’s so cute….! I’ve found dried goji berry at vegan shop, and I never made something with goji berry before. Sometimes I made muffin for breakfast, and it’s time to use the goji berry to combine. I mixed the dough with melted chocolate (mixture of chocolate block and butter) and cocoa powder, to make chocolate taste.

If you don’t have mini muffin pan, you can use the normal muffin pan, but you have to bake longer. Enjoy your muffins:-).

Goji berry mini muffins

Ingredients:

  • 1 cup flour
  • 1/2 cup millet
  • 1 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons cacao powder
  • -----------------------------------
  • 2 eggs
  • 2 bananas, mashed
  • 3 tablespoons sugar
  • ------------------------
  • 50g chocolate block
  • 1 cup butter
  • (melt in microwave),stir
  • -------------------------
  • 1/2 cup dried goji berries and some more for topping

Instructions:

  1. Combine all dry ingredients, set aside.
  2. Preheat oven 180°C.
  3. In a bowl, whisk egg and sugar until foamy, add mashed banana, stir well.
  4. Add melted chocolate, combine well.
  5. Stir in dried goji berries.
  6. Prepare mini muffin baking pan. Grease with butter or oil.
  7. Pour the dough into the mini muffin baking pan.
  8. Add one piece of goji berry on top.
  9. Bake 180°C for 10-12 minutes.
  10. Cool down and remove from the pan.
