The last few months I experimented gluten free cake recipes, this is one of my favorite recipe, it took a lot of ingredients to make this recipe and maybe you have to bought it at organic store. October is pumpkin season …so it would be a lot pumpkin recipe on this blog.

Gluten Free Pumpkin Apple Raisin Cake
  • 1 cup pumpkin puree
  • ½ cup coconut oil
  • 2 tablespoons flax seed eggs (2 tablespoons flax seeds +4 tablespoons water)
  • 100ml almond milk
  • juice of 1 orange

  • 3 tablespoons coconut sugar
  • 3 tablespoons pumpkin seed flour
  • 4 tablespoons brown rice flour
  • 2 tablespoons flax seed flour
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • pinch of vanilla powder

  • ½ cup raisin
  • ¼ cup walnut, chopped
  • 1 apple, peeled, diced
  1. Preheat oven 180°C.
  2. Combine all wet ingredients in a bowl, mix well.
  3. Combine all dry ingredients and pour into wet ingredients.
  4. Add chopped walnut, raisin and diced apple, stir well.
  5. Prepare round baking dish/form underlined with parchment paper, pour the dough.
  6. Bake 180°C for 30-40 minutes. Remove from oven, cool down.
