Garlic knots

  • Bread dough:
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons fresh yeast
  • 1 cup warm water
  • 1 tablespoon butter, room temperature
  • 1 teaspoon sugar
  • Sauce for coating;
  • 3 cloves of garlic, minced
  • 2 tablespoon chopped fresh parsley
  • 1/4 cup olive oil
  • salt and pepper to taste

  1. For the bread dough: In a bowl, combine dry ingredients ; flour and salt. In another bowl, combine warm water and fresh yeast, add sugar and butter. Pour yeast mixture into dry ingredients. Mix with hand into a smooth dough on floured surface. Roll into a single ball, cover with a cloth and let it stand for 1 hour. Place the ball of dough on a floured surface and cut into strips. Form the knots from each strips and place them on the parchment lined baking sheet.
  2. Preheat the oven to 180°C/375°F, line a baking sheet with parchment paper.
  3. Bake for 15-20 minutes or until golden brown, meanwhile make the sauce.
  4. For the sauce: In a small food processor, add the garlic, oil and parsley, blend until smooth. (or you can roughly chop the parsley and garlic with knife and combine with olive oil).
  5. Immediately add the knots to a large bowl and pour over the parsley garlic oil, season with a salt and pepper and toss together until they are well coated in the garlic oil.
