Anybody like to eat eggplant? I eat it maybe once per month, so rarely. It’s because I don’t know how to prepare delicious dish with eggplant. Like always, I surfed on internet and found many recipes with eggplant, but most of it are baked in a oven, maybe I’m to lazy to turn on the oven, just for small portion of eggplant.

Finally I found recipe without baked it. This garlic balsamic eggplant recipe is easy to make. First, slice the eggplant, mix the marinade ingredients, marinade the eggplant for 30 minutes, heat a pan, place the eggplant, cook for few minutes and serve with the marinade.

Garlic Balsamic Eggplant


  • 1 medium eggplant
  • 3 cloves garlic, minced
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons chopped parsley
  • 1/4 cup olive oil
  • salt
  • pepper


  1. Mix all ingredients (except for the eggplant) into plastic container, mix well.
  2. Slice eggplant 1cm thick and mix into marinade mixture
  3. Close the container, shake it until eggplant covered, marinated for 20-30 minutes.
  4. Heat a pan on a stove, place eggplant on the pan (no need additional oil), cook until brown on each side (about 3-4 minutes each side).
  5. Serve with extra marinade.
