Greeny pasta!!!….Fettuccine Avocado Spinach Basil sauce. Sound healthy right? Take a look the pasta sauce below; combine avocado, spinach, fresh basil leaves, lemon juice and garlic. Blend with food processor until smooth, season with salt and pepper, that’s it, the pasta sauce is ready. The pasta that I used here is Fettuccine, you can also use any kind of pasta you have at home. Cook the pasta according to cooking instructions.

Here, just boil the dried fettuccine into salted boiling water, cook until “al dente”add one tablespoon butter, combine well.  Stir in pasta sauce, add grated parmesan cheese, ready to serve. Enjoy the fettuccine avocado spinach basil sauce!.

Fettuccine Avocado Spinach Basil Sauce

Ingredients:

  • 200g dried fettuccine, boiled until al dente
  • 1 liter water + 1 teaspoon salt
  • 1 tablespoon butter
  • --------------------------------------------
  • For the sauce:
  • 1 ripe avocado, cut chunks the flesh
  • 1 cup basil, washed
  • 1 cup spinach, washed
  • 1 clove garlic, peeled, chopped
  • 2 tablespoons lemon juice (from 1/2 lemon)
  • 1 tablespoon olive oil
  • salt and pepper to taste

  • 4 tablespoons grated parmesan cheese

Instructions:

  1. In a large stockpot, bring water to a boil, add salt. Boil pasta according to cooking instructions. Remove the rest of the water. Add one tablespoon butter, stir well.
  2. While the pasta is cooking, blend avocado, spinach, basil, garlic and lemon juice until smooth. Add olive oil, season with salt and pepper.
  3. Pour the sauce into boiled pasta, stir in grated parmesan cheese. Combine well. Ready to serve.

  1. Oooh, nice! I once had avocado sauce many years ago and it wasn’t very nice but I can tell from your recipe that this will be delicious! Much lighter with the addition of greens and lemon. Great idea, thanks for sharing!
