Duchess Potatoes

I’m addicted to this Duchess potatoes, it looks so cute and taste good :-). It’s made from purée of mashed potatoes and combine with egg yolk, butter, salt, pepper and nutmeg. Place it in piping bag with star tip and make a swirl shapes. bake until golden.

Duchess Potatoes
  • 7 medium potatoes, peeled and chopped
  • 2 egg yolks
  • 1 Tablespoon butter
  • salt
  • pepper
  1. Preheat oven to 200°C/400°F.
  2. Line a baking sheet pan, underline with parchment paper.
  3. Boil the potatoes in water for about 20 minutes, drain.
  4. Add egg yolks, butter, salt and pepper.
  5. Mash until smooth.
  6. Add the mashed potatoes to a piping bag fitted with a wide star tip.
  7. Pipe onto the parchment lined sheet pan to make small swirly shapes.
  8. Bake in the oven for about 20 minutes until they turn a little brown on the edges.
