Double Chocolate Muffins

I’ve made this double chocolate muffins for breakfast, I like to eat muffins for breakfast, that’s why I usually used a small amount sugar on this recipe. Of course you can enjoy it as dessert too for coffee time. Enjoy it!

This recipe inspired by Bright Eyed Baker with Ultimate Double Chocolate Muffins .

Double Chocolate Muffins
  • 2 cups all-purpose flour
  • 1 cup cocoa powder, sifted
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup sugar
  • ½ cup canola oil
  • ½ cup cream cheese
  • 1 tablespoon vanilla extract
  • 1 cup chocolate chips
  1. Preheat oven to 375ºF/190°C.
  2. Grease muffin tin with oil or butter.
  3. In a bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt.
  4. In another bowl, beat the eggs on medium-high speed with electric mixer. Slowly add the sugar and beat until thickened. Add oil, vanilla and cream cheese. Mix well
  5. Add dry ingredients to the wet and combine well. Add chocolate chips, stir with spatula.
  6. Scoop the batter into the prepared muffin cups.
  7. Bake muffins in preheated oven for 10 minutes, and then reduce heat to 350ºF/170°C and bake another 7-10 minutes, until a toothpick come out clean.
  8. Cool muffins for about 15 minutes before transferring to a wire rack to cool completely.
