This date bars was sooo yummy, I made this actually for dessert but I also eat this for breakfast with a cup of coffee. It’s very easy to make.

Grease a square baking pan with oil or butter, set aside. In a sauce pan, add dates, water and sugar. Bring to a boil and cook about 5 minutes until mixture turns into thick. Remove from heat and add vanilla powder. In a large bowl, whisk together the flour, oats, brown sugar, and baking powder. Add melted butter and stir well. Press half of the flour mixture into the prepared baking pan. Pour date filling over the top. Then press the remaining flour mixture over the top of the filling. Bake for 20 minutes until turns into golden color. Cool down and cut into small square bars.

Ingredients:

  • Filling:
  • 300g dates, pitted, chopped
  • 1 cup water
  • 1 tablespoon brown sugar
  • a pinch of vanilla powder
  • Crust:
  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • 1 cups oats
  • ½ cup brown sugar
  • ½ teaspoon baking powder
  • ½ cup butter, melted

Instructions:

  1. Preheat oven to 180°C/350°F.
  2. Grease a square baking pan with oil or butter, set aside.
  3. In a sauce pan, add dates, water and sugar. Bring to a boil and cook about 5 minutes until mixture turns into thick. Remove from heat and add vanilla powder.
  4. In a large bowl, whisk together the flour, oats, brown sugar, and baking powder. Add melted butter and stir well.
  5. Press half of the flour mixture into the prepared baking pan. Pour date filling over the top. Then press the remaining flour mixture over the top of the filling.
  6. Bake for 20 minutes until turns into golden color.
  7. Cool down.
  8. Cut into small square bars.
