Are you looking for healthy snacks recipe? you should try this one ; crispy parmesan soybeans. This roasted soybeans are a crunchy snack that will make you addicted. Roasted soybeans can be eaten out of hand like nuts, or they make a delicious topping for salads. Though cooking roasted soybeans takes a bit of time, but it’s worth.

For this recipe, I used dried soybeans, then I soaked it with water overnight, tossed with olive oil, seasoned with salt and pepper, roasted it and coated it with grated parmesan cheese. Enjoy the snacks!

Crispy Parmesan Soybeans


  • 1 cup dried soybeans
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese


  1. Soak soybeans in water 8-12 hours (overnight). Be sure to use enough water, the beans will expand to about 3 cups. Rinse the beans.
  2. Sprinkle olive oil over the beans and toss lightly to coat.
  3. Sprinkle salt and pepper over the beans and continue to toss until coated.
  4. Spread the beans on a baking sheet.
  5. Bake at preheated oven 350°F/180°C, stirring after 15 minutes. Stir beans and return to oven, baking and stirring every 5 minutes until soybeans are golden brown and crunchy. It usually takes 25-45 minutes. They should be light browned.
  6. Add grated parmesan cheese and coat soybeans well while hot.
