Cream of Mushroom Soup

This cream of mushroom soup is perfect to serve for cold night dinner, every time when the weather turns into cold here, I always made soup, such as; Corn Egg drop Soup, Miso Soup and Spinach Coconut Milk Soup . For this recipe I used brown Champignon mushrooms. It was so delicious, you should try this! :-).

This homemade cream of mushroom soup recipe adapted from Another Root.

Cream of Mushroom Soup


  • 250g brown Champignon mushrooms, sliced
  • 2 tablespoons butter or olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 3 tablespoons flour
  • 2 cups vegetable broth
  • 1 cup milk or 1/2 cup cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper


  1. Melt the butter in saucepan or soup pot.
  2. Add the onion and sliced mushrooms, sauté about 2-3 minutes, .
  3. Add the garlic and sauté until fragrant, about 1 minute.
  4. Stir in the flour until is absorbs all remaining butter and liquid and cook for 1 minute until lightly browned.
  5. Pour in the broth and stir to combine and stir well.
  6. Add the milk, salt and pepper.
  7. Bring to a simmer for about 5 minutes until thickened.
