Last time I posted Tofu cooked in coconut milk and soya sauce, this time I cook chicken cooked in coconut milk and soya sauce season with ginger and lemongrass, it’s amazing taste, serve with warmed basmati rice, it would be your perfect simple dinner. I tried to make asian flavor touch on my dish, since I miss so much Indonesian cuisine that I couldn’t easily find in Germany. On this recipe I used thick soya sauce, this soya sauce is commonly used in Indonesia, you could buy it at Asia shop.

Ingredients
  • 200g chicken fillet, diced
  • 5 shallots, sliced
  • 2 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 200ml coconut milk
  • 5 tablespoons thick soya sauce
  • 2cm ginger, peeled and crushed
  • 3 red chilies, chopped
  • 1 stick lemongrass, knotted
  • salt and pepper
Instructions
  1. Heat oil in a pan, sauté sliced shallot, add crushed garlic, add diced chicken, stir for few minutes.
  2. Pour coconut milk and soya sauce.
  3. Add crushed ginger, chili and lemongrass.
  4. Season with salt and pepper.
  5. Reduce the heat, cook another 10-15 minutes until the sauce become a little bit thick.
  6. Serve with warm rice
