Before I moved to Germany, I don’t really like mushrooms, I don’t know why after 3 years live in Germany, I get used to eat mushrooms, I can find different kind of mushrooms here, not only Champignon mushrooms but also, Oyster mushrooms, Shiitake mushrooms, etc.

This time I’ve made appetizer bites from brown Champignon mushrooms, filled with mixture of gouda cheese and rucola. Rucola? yes that salad. Normally I ate that raw, but a little bit boring for me to eat that as a salad, sometimes I also made pesto from rucola. Try this yummy cheese rucola stuffed mushrooms small bites recipe.

Cheese & Rucola stuffed Mushrooms


  • 200g brown Champignon mushrooms
  • 50g cheddar or gouda cheese, grated
  • a handful of rucola
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 tablespoons flour
  • 100ml vegetable broth


  1. Remove the stems from the mushrooms.
  2. Preheat oven 180°C / 350°F.
  3. Heat oil in a pan, sauté chopped onion for few minutes, add flour, stir. Pour vegetable broth, continue stirring, until turns into thick consistency. Add grated cheese and rucola, stir well. Remove from heat.
  4. Prepare baking sheet underlined with parchment paper.
  5. Fill one tablespoon of the cheese-rucola mixture into mushrooms, repeat until finish.
  6. Bake for 10-15 minutes.
  7. Ready to serve.
