Cheese Polenta

Normally I served polenta as side dish for meat dish. Polenta is cornmeal boiled into a porridge, you can eat directly or baked, fried or grilled. I like to combine polenta with some cheese for the best taste. This time I’m going to post cheese polenta recipe. I’ve made spinach polenta once, that was also great mixture idea. You should give it a try:-).

This recipe adapted from Shared Appetite with Creamy Cheddar Polenta.

Cheese Polenta


  • 1 cup cornmeal /polenta
  • 1 cup milk
  • 2-3 cups water
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar/gouda cheese
  • salt
  • ground black pepper


  1. Bring the milk, 2 cups of the water, and a pinch of salt to a boil in a saucepan.
  2. Reduce heat to a low simmer and add cornmeal, constantly stirring.
  3. Simmer for 15 minutes, stirring occasionally. Add more water if it's too thick.
  4. Remove from heat, stir in butter and olive oil, stir in shredded cheese.
  5. Season with salt and ground black pepper.
  6. Ready to serve.

  1. I’m the same, I usually have it as a side! I always forget how to make polenta so thank you for sharing this! I have an enormous bag to get through because I made corn bread the other day 🙂
