Cashew Chicken


  • 400g chicken filled, cubed
  • 1/2 cup (100g) cashew nuts
  • 2 tablespoons olive oil
  • 1 teaspoon ground cayenne pepper or chili flakes
  • 2 cloves garlic, minced
  • 3 tablespoons toasted sesame seeds
  • 2 tablespoons sliced spring onions
  • For Sauce:
  • 4 tablespoons soy sauce
  • 1 tablespoon corn starch
  • 1 tablespoon sugar
  • 2 teaspoons vinegar
  • For marinade:
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil


  1. Combine 2 tablespoons soy sauce with 2 tablespoons sesame oil in medium sized bowl. Cut chicken into bite-sized pieces, put chicken pieces in soy/sesame oil mixture. Let sit while you prepare the other ingredients.
  2. In a small bowl, whisk 4 tablespoons soy sauce, 1 tbs corn starch, 1 tbs sugar, and 2 tsp vinegar. Set aside. Slice the spring onions, and measure out the chili flakes and minced garlic.
  3. Heat olive oil in a wok. Add red pepper flakes to oil,stir a couple times. Add chicken all at once, let sit for a minute or two till golden,then turn chicken. Add minced garlic to chicken. Cook chicken till golden on all sides and cooked through. Add cashews. Reduce heat and immediately pour the sauce, turning chicken over to cover everything in sauce. Sauce should thicken quite a bit, stir well. Sprinkle toasted sesame seeds and add sliced green onions.
  4. Served with warm rice.
