Carrot Soup

Ingredients:

  • 800gr Carrots
  • 1 Potato
  • 1 Onion, big
  • 2 Garlic
  • 2 teaspoons Curry powder
  • 1 teaspoon Cayenne pepper
  • 2 Tablespoons Butter
  • 600ml Vegetable broth
  • 200ml Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 bunch Parsley, chopped (about 2 Tablespoons)
  • Garnish: chopped Parsley

Instructions:

  1. Peel, wash and chop the carrots and potato.
  2. Chop the onion and mince the garlic.
  3. Heat butter in a soup pot, sauté onion and garlic for few minutes.
  4. Add curry powder and cayenne pepper, stir.
  5. Add chopped carrot and potato, stir until coated with curry+cayenne pepper mixture.
  6. Pour vegetable broth, season with salt and pepper, cover the soup pot, cook for 15 minutes.
  7. Add coconut milk, continue cooking for another 5 minutes.
  8. Blend or purée the soup, add the two tablespoons chopped parsley.
  9. Garnish with chopped parsley.
  10. You could serve it with toast bread or crouton.
